Dinner done right

I found this super easy(and delicious to boot) recipe called Salsa Verde Tostadas. It was a hit. Even Logan and Ben ate them up. I'm always on the lookout for new, good recipes so I decided to share the love.

Salsa Verde Tostadas

4 flour tortillas
1 c shredded mexican blend cheese
2 1/2 c cooked, shredded chicken or pork (i used chicken)
1 c green salsa(salsa verde) plus more for serving
1/4 c plus 2 tbs chopped cilantro(i left this out, i don't love cilantro)
1 can black beans, rinsed and drained
1/4 tsp ground cumin
Toppings: lettuce, tomateos, sour cream, avocado, olives, etc.

Preheat oven to 400 degrees. Arrange the tortillas on a rimmed baking sheet. Sprinkle cheese evenly over the tortillas, bake until golden brown, about 8 mins.

Meanwhile, in a medium bowl, toss together the chicken (or pork), salsa verde, cilantro, beans, and cumin. Spoon mixture evenly over the tortillas and bake until heated through about 8 mins.

Top warm tosadas with lettuce, tomat, and sour cream and other toppings as desired. Sprinkle with remaining cilantro.

Enjoy.

Really make it and tell me what you think!

And, if you have any new, great recipes you love, send 'em on over.

Chicken Tortilla Soup

2 cups onion, celery, carrots
Cook in 2 Tbsp. oil over med. heat until soft (abt.10 minutes)
Add 2-4 cloves garlic and cook 1 more minute.

Add:
8 cups chicken stock
1-2 shredded rotisserie chicken(s)
1 tsp. ground cumin
2 (14.5 oz) cans diced tomatoes
2-4 seeded jalapeno peppers
1/3 cup chopped fresh cilantro
6-8 white corn tortillas, sliced into strips

Let simmer 30-45 minutes and enjoy!
May serve with chips, cheese and sour cream, although it's wonderful just by itself.

NOTE: Don't be afraid of the cilantro. It cooks down and adds a wonderful flavor that isn't nearly as strong as fresh cilantro.

As you can tell, this makes a big batch of soup. Got it from Steven Gibby, who cooked for us all week while Jim was sick.

Okay, I fixed your recipe tonight but grabbed curry instead of cumin. So mine had a little Indian twist to it, but we loved it anyway. That may be a new favorite.
